Alouda: A Refreshing Escape into Mauritian summer

  • Alouda is a cool and refreshing Mauritian beverage that perfectly captures the island's tropical essence. This vibrant mixture of creamy milk, playful textures and sweet flavors embodies the island's spirit of joy and resourcefulness. This chilled beverage is made of milk which is the base of the drink, black basil seeds which swell in water to create a fun and popping sensation, agar-agar jelly and syrup of either vanilla, strawberry or almond to give an amazing texture to the drink.
  • Early Indian immigrants probably brought the concept of Alouda to Mauritius but Mauritians have made it their own by adapting local flavours. This refreshing drink is mostly drunk during the summer season of Mauritius under the Mauritian sun and it is also prepared for special occasions during Christmas and New Year where families really enjoy drinking this cold beverage among themselves.

Here are the instructions on how to make this Vibrant Milky Beverage Drink:

-In a pot, pour in 1 litre of whole milk, 1 can of evaporated milk and 1/2 can of condensed milk. 

-Mix well on a medium heat until it boils(optional). By boiling the milk makes it thicker.

-In a bowl, add 2 tablespoon of basil seeds, 2 cups of water and mix. With a skimmer, remove the impurities that are on top, soak for 15 minutes.  

-Once soaked, drain and set aside.

-In a separate bowl or jug, add water, 5 grams of agar-agar and sugar and mix.

-In a pot, pour in the mixture and bring to a boil on medium-high heat. When water starts boiling, add preferred syrup colouring like vanilla, strawberry or almond and then mix it over.

-Remove bowl from the heat and then pour it in a bowl, let it cool down and let the agar-agar set in the refrigerator for 20 minutes. Once the agar-agar is set, grate it.

-Add 1 tablespoon of rose water and few drops of preferred syrup colouring to the milk such as vanilla, strawberry or almond and then mix well and combine together.

-At last, sprinkle the grated agar-agar on top of the drink(optional).
